Edible Vegan Chocolate Chip Cookie Dough

Edible Vegan Chocolate Chip Cookie Dough

…and a less staged version on Snapchat (username –> myinnershakti).

A totally unexpected thing happened after doing so.  I received more than the usual number of messages and emails asking for my recipe.

Honestly, this is a “recipe” because I went into it with no plan in mind.  And because it was way too easy to make (like too easy for my own good!).

Before I share said “recipe,” let me tell you how this edible vegan chocolate chip cookie dough came to be.

Vishnu and I had just finished dinner on Tuesday night.  He was cleaning the counters, and I was getting ready to do the dishes.  Here’s the conversation that followed…

P: Are you craving something sweet?
V: Par, we just ate.
P: What’s your point?  Hunger has nothing to do with dessert.
V: I’m good. (Although, he did eat some dried mango from TJs an hour or so later!)
P: Fine, I’m going to make something sweet for ONE.  And I will not share!

I finished the dishes and immediately started rummaging around our pantry and fridge.  My first instinct was to find a cookie recipe for one, but in all honesty, I didn’t want to turn on the oven.  But of course, now I had cookies on my mind.  I thought about how I could make something that tasted like a cookie but didn’t require baking.

It was in that moment when my edible cookie dough was born!

This little concoction was delicious and satisfying in a way most sweet treats aren’t (re: healthy fats!).  The best part is that it took less than two minutes to whip up a bowl of cookie dough goodness!  I highly recommend you experiment and use this “recipe” as your base.  If you’re feeling adventurous, try different flours, nut butters, and add-ins!  You can’t go wrong!

Edible Vegan Chocolate Chip Cookie Dough
Serves 1

2 tablespoons almond meal/flour
1 tablespoon coconut flour
1/2 tablespoon peanut butter
2 tablespoons almond milk
1/2 tablespoon maple syrup
1/2 teaspoon vanilla extract
1 tablespoon chocolate chips (I love Enjoy Life)

In a small bowl, mix together the almond meal and coconut flour.  Work the peanut butter in with the flours until it resembles a crumbly mixture. Add the wet ingredients (almond milk, maple syrup, and vanilla extract) and mix until combined.  Fold in the chocolate chips.  Enjoy!

Never Ending Sweet Tooth

You know when you’re sitting around with a group of people and out of nowhere someone starts asking random questions?  Well, that happened to me the other day, and the best question asked was, “What would you want your last meal on Earth to be?”  Honestly, it didn’t even take me second seconds to blurt out, “Warm, gooey chocolate chip cookies and a tall glass of milk!”  Now that’s what I call a sweet tooth! 

For as long as I can remember, I have loved chocolate chip cookies – Chips Ahoy, Tollhouse, Keebler, Soft Batch – you name it, I ate it!  However, the one thing I wasn’t so good at growing up was making my own cookies from scratch.  Sure, I could slice n’ bake and call them my own, but that’s not my style!  I wanted to perfect my own chocolate chip cookie.

The perfect opportunity came to be in the 10th grade. We had to bake cookies for Chemistry class (for pi day or something).  I remember driving to the store to buy all the necessary ingredients, going home and actually making the cookies, and then being completely disappointed when they came out as hard as hockey pucks.  I still brought them to class, only to have some boy throw one across the room to prove that they were unbreakable.  Eek!  Talk about embarrassed!

Since then, I haven’t really experimented with homemade cookies much.  It’s been break n’ bake ever since.  Well, until today that is…

I saw Katie’s Flourless Chocolate Chip Cookie recipe yesterday and just knew that I had to make something very similar very soon.  So, I got home, ate a quick dinner, and got started.  I was in an adventurous mood today, so I took her recipe and modified it a little.  And if you’ve already read Katie’s post from yesterday, you know my cookies don’t look half as beautiful as hers, but they tasted really good.  That’s what counts, right?!

Double Dark Chocolate Flourless Cookies
Modified from Chocolate Covered Katie

Yields 6 cookies

3/4 cup quick cooking oats
1/4 teaspoon baking soda
1/8 teaspoon salt
2 tablespoons raw cane sugar
1 tablespoon unsweetened dark chocolate cocoa powder
1 tablespoon peanut butter
2 tablespoons unsweetened applesauce
2 tablespoons dark chocolate chips

Preheat oven to 375 degrees.  Combine first five ingredients in a blender until the mixture is coarsely combined.  Melt the peanut butter in the microwave for 10-15 seconds.  Mix melted peanut butter and apple sauce in with the dry ingredients.  Add in the chocolate chips right before the mixture starts to form into a ball of “dough.”  Form 6 cookie patties and place on lightly sprayed baking sheet.  Bake for 9 minutes.  Enjoy!

Sure, these aren’t decadent, rich cookies, but they sure did satisfy my sweet tooth.  And if I can do that while still being healthy, I’ll take it!
