Let the Training Begin

Don’t you love it when someone randomly thinks of you?  That happened to me today.  My cousin thought of me after seeing this quote – “The way to know life is to love many things” –Vincent Van Gogh.  Her email telling me so really made my day!  Love you, Bijalben!

So, I’m not sure if you remember or not, but my sister and I are running a half marathon together in August.  Smile  I just put together my training plan and wanted to share.  Please feel free to give me some feedback if you see something you don’t agree with.  We don’t start training until next week, so there’s plenty of time to make changes.

When I trained for my first half marathon, I followed a similar plan, but this time around I’m doing things a bit differently and am encouraging my sister to do the same.

  • The first time around I didn’t do any strength training/yoga or cross training.  I think it’s important to set aside days for this and this alone.  Specifically for me, I think S&S will help alleviate (hopefully prevent) some of the knee pain I had when I trained the first time around.  And let’s face it, I like muscles! Winking smile
  • Something I am a bit ashamed to admit is that I never, until recently, had proper running shoes that supported MY feet.  I started running over six years ago in an effort to lose weight, and since then, I’ve been wearing your run of the mill “running shoes.”  I always assumed that if they felt springy when you put them on, you were good to go.  I assumed wrong.  I got fitted for shoes last October, and what a difference that has made for me.  I even made my sister go get fitted a couple of weeks ago.  The shoe thing alone makes me feel more confident this time around.
  • My weight lose journey actually began my junior year of college, but my true healthy living journey only began a year or so ago.  I know for a fact that the first time I trained I didn’t fuel my body properly.  I would eat a granola bar and drink a small glass of milk before a long run ( 5 miles and above)…eek!  I now realize that in order to maximize performance you have to try to incorporate a good mix of proteins, healthy fats, and carbs into your meals.  I know I ate enough the first time around (for the most part), but I could have done better in the quality department.  And I’m only human, so there will be days of imperfect eating this time around, but at least I’m going in with a plan.
  • Hydration is something I try to work on in general, but I think that it’s even more important when you’re putting your body through 12 weeks of something it’s not used to.  I never paid much attention to the amount of water I consumed on a daily basis, but it’s something that’s now important to me so I try to be more cognizant of it, especially now.  My goal is to drink at least six glasses a day.  Wish me luck!

So there you have it – my 12 week training plan and must dos.  Please share any thoughts you may have.  There are so many seasoned runners out there that have done lots of different races, and I’d love to hear from all of you!

Celebrations All Around!

Hi y’all!  I feel like I haven’t blogged in forever!  I guess it’s just the irregular schedule from this past weekend that has me feeling off.

As you know, I went home to Atlanta this weekend to see my family and Vishnu, but the real reason why I chose this weekend was because one of my friends (we’ll call her P and her fiancé B) was getting engaged on Saturday.  Smile I have actually known PB (I love it!) since high school but only became closer to both when P and I lived together my last year of grad school.  In that one year, we bonded over both silly and serious things and are now friends for life!  I love PB and am SO excited and happy for them!

Here are some highlights from their engagement ceremony/party…

Before I go on, I just want to stress that this explanation of the ceremony is from my understanding and observations.  Something to realize is that every family has their own traditions for things like this, but the true essence of it all remains the same.

So the basic concept is this…   The grooms family hosts the engagement ceremony (the bride’s family hosts the wedding).  The first part consists of the groom’s mother and aunts giving the bride new goodies (jewelry, saris, etc.).  Then the bride’s mom gives the groom something (B got a gold chain).  Next, the women of both families come up one by one to bless the couple.  They put kanku (red turmeric powder) on the bride and groom’s foreheads and feed them sweets.  Even I got in on some of the fun!

And although B actually proposed a few days earlier, he did it again for all to experience. Smile

So that was the ceremony part.  Like I said, every family (or set of families) does things differently.  Some opt for a longer pooja (prayer service) while others keep it more simple.

P’s sister also created a couples game for everyone to play.  She had about 10 couples (Vishnu and I included) sit in chairs back to back.  We had to answer a series of 10 questions about one another, and the couple with the most matching answers won.  Vishnu and I only matched on 4 questions – 40%!!!  LOL!  Oh well, most of the couples there had about 20 years on us anyways. Winking smile

There was also lots of dancing, great food, and a delicious cake!  What a fun night!  Here’s to a beautiful couple!!!  I can’t wait until next May!

For a Mother’s Day lunch, my mom and I stopped at a place called Lotta Frutta on our way to the airport.  If you’re ever in Atlanta, I highly recommend you visit this place.  My mom is a very picky eater when it comes to eating out, and even she loved it!  From the outside it doesn’t look like much, but the food is amazing!  The menu is very simple – salads, sandwiches, smoothies, fruit cups, and a few other specialty items.  We ordered a couple of Just Veggin sandwiches made with sweet Latin bread, avocado, tomatoes, sprouts, cucumbers, and Havarti cheese.  We also ordered a Lotta Mora smoothie made with Andean blackberries, bananas, and strawberries – so freakin’ good!

Well, that was my weekend in a post!  I hope you too had a great weekend filled with friends and family!

Oh and I’m glad so many of you like The Alchemist!  I’m about a third of the way through and have to agree with Shanna – it really is one of those books that you can’t read all at once.  You want to absorb every single word before moving on.  Love it so far!  I’ll share more of my thoughts when I finish.

You know what I just realized?  I never mentioned, until today, anything about how I’m going home to the A this week (tomorrow to be exact)!  My friend is getting engaged (if you don’t know what getting engaged means, read this)!!  I get in tomorrow night, and I’ll be there until Sunday afternoon.  So excited!  Besides getting dressed up in my new Indian garb (and making Vishnu match me), I plan to hang out with friends and Vishnu, shop with my mom (she has Coach on her mind this Mother’s Day!), and watch a movie or two with my dad.  Oh and there will be eating…lots of eating! Smile

But first, there’s a list of to dos that need to be crossed off…

Red Curry Mac n’ Cheese

The first thing people learn upon meeting me is that I LOVE LOVE LOVE chocolate.  Should I say it again?  LOVE!!!  Something that people who stick around learn is that I also LOVE LOVE LOVE cheese.  I have an unhealthy obsession with these two things that I’m working on.  Hey, we all have our vices, right!?

I got home from work today and stared at the contents of my pantry and refrigerator hoping for a brilliant idea to hit me upside the head.  And today it did!  As soon as I saw the cheese and red curry paste in my fridge and the pasta in my pantry, I knew exactly what I wanted to make for dinner – Red Curry Mac n’ Cheese!

In college, I used to make a very unhealthy mac n’ cheese filled with cream cheese and full fat cheddar cheese.  So bad but so good!  After making it a couple of times, I got the hang of the basics…rue –> cheese sauce.  The first time I tried healthifying the full fat version it turned out to be a fail.  But I think I have it down pat now.  Smile  This version is healthier but it still contains cheese, people!  I guess I’d call it semi-healthy!

The red curry adds a very unique flavor and contrast to the sharp cheddar. This dish is rich and creamy…everything I look for in my mac n’ cheese!  And honestly, I was a bit surprised at how good this came out!  Don’t you love it when that happens?!

Let’s get to it…

Red Curry Mac n’ Cheese
Yields 3-4 servings

1 1/2 cups cooked whole wheat elbow pasta
1 tablespoon olive oil
2 tablespoon Earth Balance, divided
2 tablespoons all purpose flour
2 teaspoons red curry paste
1 cup milk (I used skim)
1 (overflowing) cup 2% sharp cheddar cheese
salt to taste
a few dashes of paprika and garlic powder
small handful of breadcrumbs

Melt olive oil and 1 tablespoon Earth Balance in a medium pot.  Add in flour and whisk until combined into a thick paste.  Allow the flour paste to cook until it starts to turn brown (be careful to see that it doesn’t burn).  Add red curry paste and mix until combined.  Add milk and whisk until the flour paste melts into the milk (may take a few minutes).  When the milk starts to bubble, add cheese and whisk until combined.  Add salt, paprika, and garlic powder and stir until combined.  Add cooked pasta to sauce and mix well.  Pour pasta into a small glass dish.  Melt remaining 1 tablespoon Earth Balance in the microwave for 10 seconds.  Toss breadcrumbs in melted EB and sprinkle over mac n’ cheese.  Place the pan under the broiler for a few minutes until the top starts to turn brown.  Remove from broiler and devour!!!

I can’t say it enough…this was SOOO good (and SO easy)!  I have enough leftovers to last me three more meals…YIPPEE!!!!

Mushroom, Onion, and Pepper Curry

Thank you all so much for your positive comments about my walk yesterday.  It was tough (especially towards the end) but totally worth it!  I’m not going to lie though – my hamstrings and hip flexors were killing me today!  Ouch!

One of my goals when starting this blog was to cook more Indian food.  I haven’t really been doing much of that as of late, but I have a new recipe for y’all tonight!  This one comes to you from my momma.  I was talking to her on my way to work today, and she gave me the basic rundown on the spices.  She also reminded me to tell y’all that the beauty of Indian cooking comes from experimenting with different spices, flavors, veggies, proteins, etc.  Her message – don’t shy away from it!

Mushroom, Onion, and Pepper Curry

2 tablespoons olive oil

1/2 teaspoon cumin seeds

1 medium onion, chopped

1 medium green bell pepper, chopped

~2-3 cups mushrooms, chopped

1 teaspoon salt

1/2 teaspoon turmeric powder

1/2 – 1 teaspoon red chili powder

2 teaspoons garam masala (note: this is a very hot spice, so adjust accordingly)

1 can diced tomatoes

naan, rice, quinoa, etc. to serve with the curry

Warm up oil on medium high heat.  Add cumin seeds and cook for 2-3 minutes.  Add onions and cook for another 3-5 minutes until slightly translucent.  Add green bell peppers and cook for 2 more minutes.  Add mushrooms and then let veggie mixture cook for 5 minutes longer.  Add spices and mix well.  Finally, add tomatoes and allow the mixture to simmer on low heat for 10-15 minutes.

Serve with naan, rice, or quinoa. Smile

Sirens

Hello, friends!  TGIF!!!

Well, do I have a story for you!  First off, you should probably know that I always have some sort of story to tell.  Some are hilarious to all, and some are probably just funny to me.  My friends may even tell you that they’re not laughing at my story but rather how I tell it because I always crack up in the middle of it all and have a hard time wrapping up.  The phrase that usually gets thrown around during Parita’s story hour is “there she goes again!”

Anyways, today started off like any other Friday.  Got up, worked out, showered, made and ate breakfast, and headed to work.  Nothing unusual about that at all.  Then I got to work, got a bunch done, and then headed out to lunch with a coworker.  We had decided on sushi, and since both us were absolutely famished, we left right at 11:30.  I offered to drive, and off we went. 

Something else I should mention is that I’ve gotten a couple…errr…a few speeding tickets in my day, so you can imagine that police sightings freak me out big time!  Anyways, please continue on… 

The roads in this area are pretty much one lane, narrow, and full of potholes.  Well, I was driving and chatting, and all of a sudden, I see sirens going off behind me.  EEEEK!  I asked my coworker if she knew why I was being pulled over, and she had no clue.  Lo and behold, the roads are also full of unmarked crosswalks.  I was being pulled over because I didn’t stop at a crosswalk for a man who I didn’t even see.  The police officer told me that the two cars in front of me didn’t stop when they should have, but I really should have.  I asked if there were blinking lights that I missed, and he said no.  Is it just me or does any of that not make sense at all?!  I felt like asking, “Why didn’t you pull them over as well?”  I refrained.  I handed over my license, registration, and insurance.  Then the questions started – “why do you have a GA license?  do you live around here?  are you a student?”  I stayed calm throughout.  Then the officer said something that was pretty much, in my opinion, my saving grace.  He said that my company actually asked the local police department to stand guard at this particular crosswalk to ensure the safety of pedestrians walking to the local restaurants.  I looked at him and said, “I work for [company name].”  He looked at me a little skeptically so I pulled out my badge.  He took one look and said, “Well consider this a warning and remember that this is a $250 offense.”  At that moment, a huge wave of relief washed over me.  I actually hated using my badge to get out of a ticket, but I was not about to dish out $250 for something I didn’t even know I committed.  I swear I didn’t even see the guy, and I was driving at 30 MPH.  All I can say is PHEWWWW!  That’s my story…

And here’s the delicious reason why I was out and about in the first place…my lunch…

Breakfast for Dinner

After having some savory stoup for lunch, I was craving something slightly sweet and carby for dinner.  I thought and I thought, and finally the light went off – tonight shall be breakfast for dinner night!! 

One of my favorite breakfast meals of all time are pancakes, chocolate chip banana walnut pancakes to be exact.  Well, I don’t have chocolate chips, I don’t have walnuts, and I want to use the one banana I do have in tomorrow’s breakfast.  What’s a girl do to?  Whip up some made-from-scratch whole-wheat oatmeal pancakes, that’s what…duh! 

I found this recipe in an old Gourmet Magazine my friend gave me back in grad school.  I cut it out and put it in my recipe folder.  When I was recently unpacking my stuff, I came across this folder (obviously got super excited because I finally have a real kitchen to cook in), and found this pancake recipe.  I’ve modified it a bit, so this is Parita’s version of whole-wheat oatmeal pancakes.  If you have the necessary ingredients to make this, please do!  These pancakes taste like soft, warm oatmeal cookies. 🙂

Whole-wheat Oatmeal Pancakes 
Adapted from this recipe
Serves 4

3/4 cup quick-cooking oats
1 1/2 cups plus 2 tablespoons almond milk
3/4 cup whole-wheat flour
1 1/2 teaspoons baking powder
3/4 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon salt
1 1/2 tablespoons unsweetened shredded coconut
1 flax-egg (1 tablespoon flaxseed powder mixed with 3 tablespoons water)
2 tablespoons melted Earth Balance
1 teaspoon vanilla extract
1 tablespoon sugar, honey, or agave
Accompaniments: maple syrup, fruit, nuts, nut butters, granola…the possiblities are endless

Soak oats in 3/4 cup almond milk for 10 minutes.  Meanwhile, whisk together flour, baking powder, baking soda, cinnamon, salt, and shredded coconut.  Stir flax egg, Earth Balance, sugar, vanilla extract, remaining 3/4 cup plus 2 tablespoons almond milk , and oat mixture into dry ingredients until just combined.  Heat griddle over medium heat until hot and spray with cooking spray.  Working in batches, pour 1/4 cup batter per pancake onto griddle and cook until bubbles appear on surface and the underside is golden brown.  Flip and cook other side.  Top cooked pancakes with your choice of toppings and enjoy!

NOTE: Since I was cooking for one, I just divided everything by 3 (yes, I know it should be by 4, but I was hungry!), and the recipe turned out just fine.
