There’s something to be said for weekends that leave you feeling accomplished.  Doing a bunch of stuff in a short two-day period can be exhausting, so you have to plan everything into the natural rhythm of your days.  Right?!  Maybe it’s just me and my to do list loving self!

With that, let me tell you guys what I accomplished this weekend.

On Friday night, Vishnu and I stuck to our date night in plans and made dinner together.  The gnocchi (and chicken for Vishnu) + sage butter sauce turned out perfectly!  It took a lot of work (both with the prep and the clean-up), but it was worth the effort.  It may not have looked like a restaurant quality meal, but it sure tasted like one.

As it turns out, this meal was not very photogenic, however, trust me, it tasted delicious!

Saturday morning started bright and early for me because of a volunteer kick-off event (I’m volunteering as a mentor with an organization called LaunchU).  It’s pretty amazing, and I feel like I’ve learned a lot already.  I’ll share more in a future post!

After the event, I walked to a nearby Macy’s to pick up a duvet cover Vishnu and I have had our eyes on for weeks.  After four failed online/customer service ordering attempts (don’t get me started!), this bad boy is finally ours (it’s SO soft)!  Next on the agenda – pillows to spruce it up a bit!

The shopping didn’t end there.  After I got home and ate some lunch, I headed back out…to my favorite store…Target!  It was a successful trip, and I plan to share my haul in a future post.  So many fun new products!

A few hours later, Vishnu and I headed to the Lakeview Taco Fest.  I hate to even admit this, but I totally forgot to take pictures…oops!  There weren’t too many vegetarian options, and the lines for each of the vendors were super long, but based on what I did get to try, we’ll be back next year.  My favorite part of the night was meeting up with my coworker/friend Erin and her family.  Her son Max is THE CUTEST!  I also really enjoyed listening to the cover band.  They played so many old school songs.  We couldn’t help but stand on the sidelines and dance a little!

We got home around 8ish and settled in to watch The Inside Man.  As always, I fell asleep about half way through.  Typical!

Sunday was a pretty chill day.  We didn’t have too much on the agenda.  Vishnu and I tag-teamed our cleaning efforts, I worked out (arms + treadmill run), I made a quick run to TJs, I made lasagna for Aekta and Adarsh (their schedules are insane right now which means their eating habits are sub par!), Vishnu put up pictture ledges in our living room (this reminds me that I need to share a living room update because both Vishnu and I love how it turned out!), and we watched football (typical!).

And now it’s Monday.  Hopefully more accomplishments are in all of our futures. 🙂

  1. Sounds like a totally accomplished weekend!! I had a great weekend. I went to a special class my gym offered for the day called “Bottoms Up: Butt Sculpt” (lol), watched some football, went shopping, ate some delicious food and had an Instagram foodie meet up! So my accomplishment: having fun and not working. I’d say that’s a big accomplishment! 🙂 Have a great week, Par!
