I hope your weekend was splendid and fun.  Mine was a bit all over the place.  On Friday morning, I headed down to Fort Lauderdale for the night.  I had to take care of a couple of things, AND I got to see my man!  Two for one!

Vishnu wanted to eat a meal centered around quinoa, so for dinner, we made this…

We topped the quinoa with roasted veggies (zucchini, yellow squash, carrots, broccoli, onions, and sweet potatoes) and Mmmm Sauce.  This meal was a huge hit!

And since I was the head cook, Vishnu and Mike (his roommate) cleaned.  I could get used to this!

Dessert was new to me break and bake cookies by Immaculate Baking Co.

These mini cookies were delicious, and the ingredient list was impressive – only 11 ingredients, all of which I could pronounce.

Before I left on Saturday, Vishnu and I made grilled cheese sandwiches for lunch.

No worries – it still tasted pretty good.  The granny smith and pepper jack combo is a winner (burnt bread or not).

The majority of Saturday was spent creating wedding lists and updating all of my files.  I have a few appointments next week when I head back to Atlanta for another wedding, and I want to make sure everything is in order beforehand.  We’re almost at the two month mark…woo hoo!

Sunday started off with a spin class, followed by cleaning and laundry.

I also did something I’ve been thinking a lot about but have never followed through on.  I prepped lunch for the rest of the week – Mmmm Sauce, roasted veggies (onions, sweet potatoes, and Brussels sprouts), baked tofu, and quinoa.

Now all I have to do is throw a bit of everything in a contained and go.  Delicious AND healthy!

And I may have indulged in a few episodes of The Big Bang Theory over the weekend. I. Just. Can’t. Stop.

I have issues.

  1. Sounds like a fun weekend! I especially love that sound of your toastie combo- need to try adding Granny Smith slices! A yummy thing I ate this weekend was a layered dip made from refried beans- the Mexican foodie in me enjoyed it! This weekend was hectic celebrating a friend’s birthday but fun nonetheless! Have a great Monday 🙂

  2. you sure had a fun weekend. i finally rested this past weekend, my last 3 weekends were so busy. i watched tv, made a couple new things to eat, went for a walk, worked out, and slept. it was nice and relaxing. i love the quinoa meal you made, a real winner.

  3. I actually like my toast burned…or maybe I’m just accustomed to it since I burn nearly everything I cook. 🙂

    Quinoa is great! I wonder if Ali will ever request it…

  4. Mmm I bet that pepper jack and apple combo IS delicious. While not as spicy, I always love pimiento cheese with apples. People think it’s crazy, but yummmmmmmm. 🙂

    As for something fun, there was too much to even say! Wine festival, Virginia Bloggers meet-up…and this weekend brings Foxfield Races, a Steeplechase for tailgaiting, sundresses, and big, straw hats.
