Substitutions

Every morning I wake up, get ready, make breakfast, realize I’m running a little late, curse, pack my lunch, and run out the door. 

See, if I were a little smarter, I would pack my lunch the night before in order to gain a few extra minutes every morning.  Yeah, I’m not there yet.

This morning, I was not only late but also out of peanut butter.  Gasp.  No worries though.  I remedied the situation by picking up my favorite Jif Naturals brand after work.  But this morning, I was totally thrown.  What to do.  No peanut butter meant no breakfast smoothie…or did it. 

I quickly remembered Laura’s post on how she sometimes throws in a little avocado into her smoothies for added creaminess.  My stomach was extra grumbly this morning, so I trusted Laura and threw in 1/4 of an avocado into my blender along with one frozen banana, a handful of spinach, a cup of soy milk, a scoop of protein powder, some instant coffee, and a little bit of cocoa powder. 

Now, I know this combo sounds gross, but trust me when I say, you can’t taste anything but the banana, coffee, and cocoa powder.  There is really no hint of avocado or spinach.  It was delicious and very mocha”y”!

I was also out of granola this morning, which would normally mean I forgo eating my Greek yogurt as an afternoon snack.  However, I quickly remedied that situation by subbing in a 1/2 cup of Kashi Go Lean Honey Almond Crunch cereal instead.  The result?  It’s actually a great yogurt topping – light, sweet, and very crunchy.  AND you get more with less…more volume (1/2 cup vs. 1/4 cup) and less calories than granola (100 vs. 130).  Woo!

Now, let’s see if I can get my act together and pack my lunch now so I’m not running around like a crazy woman in the AM…wish me luck!

  1. Yay! I’m so glad you liked it. Love that combo – it’s my “go-to” but I use cinnamon more than coffee. Recently I began adding almond extract which has been awesome. 🙂

  2. OUT OF PB??? That’s a tragedy, my friend haha! I keep meaning to try avocado in my smoothie an am now all the more inclined! Apparently adding a baked potato has a similar effect too, worth a shot?

  3. Don’t have a weird smoothie combo, but my go-to smoothie combo is definitely a blueberry smoothie. The avocado ingredient does sound like it would add some creamier texture. I usually add a dollop of low fat/fat free ice cream.

    I love Kashi Go Lean crunch…the crunchiness most def. makes it a great yogurt topping!
