Today flew by…I guess it’s because I had a very special visitor coming in today. More on that in a minute.
I usually don’t indulge y’all in lifecasting posts because let’s be honest, my every day life is not all that exciting. I wake up, workout, go to work, come home, make and eat dinner, blog, read, and go to sleep. Not the best blog material. But today I’m going to delve into a bit of lifecasting…just for kicks!
Let’s start with this morning… My alarm went of at 5 am. Instead of waking up and heading to the gym as planned, I reset my alarm for 6:30 am. Guess what…today turned out to be a rest day! And you know what, that’s ok with me because we all need a little rest sometimes. Even though my workouts haven’t been that intense lately, my mind is constantly running and going in a million directions. So yeah, this rest day was much needed!
Work was good. Lunch was better! I’m telling you…I wish I could bring each of you to work with me for the food. A-MAZING! I had spring pea and kale risotto today with a side of apple and potato salad, a basil salad (basil, tomato, olives, onions), and a thick slice of grilled pineapple. Holy yum!
After work, I headed home to grab a bite before heading out to the airport. I quickly made a protein shake to go.
On the way to the airport, I talked to my parents. My mom told me a really scary story. Apparently, a guy at my dad’s work has been charged for killing his wife. They found her body the other day. My dad is pretty shaken up…I would be too (and honestly, I am a little bit). I mean this guy worked with my dad. My heart goes out to the woman’s children and her family. I can’t imagine what they’re going through. This story reminded me of my old dentist who was also found guilty of killing his wife. Although with him, I always knew something was a little off. Scary! You just never know with people.
Anyways, I eventually arrived at the airport and picked up my sister. It was so good to see her. She’s as cute as ever!
We were both a little hungry when we got home, so I made some gourmet (well to me at least) grilled cheese sandwiches. I used Trader Joe’s Sprouted Multi-Grain bread and lite Havarti cheese. If you have yet to try these two things, please do so immediately. They are amazing together. The bread has a really dense texture, but it isn’t too chewy. And I don’t think the cheese needs to be explained…it’s good – just take my word for it!
And today must be your lucky day because I’m about to share my secret ingredient for a perfect grilled cheese. Ready?! Mayonnaise. Before you groan and turn away, hear me out. All you want to do is spread a thin layer on both sides of the bread, and if you do, you’ll have a perfect grilled cheese every time. I promise!
After dinner, I video chatted with Vishnu. He moved down to South Florida this weekend. He’s currently in the middle of orientation week for medical school. So far so good! I must say…I love technology. Being able to see him while we talk makes all the difference.
Ok, one more funny story before I let y’all go. So when Vishnu moved to Philadelphia for graduate school (yes, he’s a nerd) a few years ago, I was VERY sad (duh!). And when we video chatted for the first time after he left, I saw his face and immediately started crying. He was so confused. Actually seeing him made me miss him even more, which in turn made me super emotional. After I realized that I was being a little silly, I started laughing, which confused him even more. He was just staring at me with a worried expression on his face. To this day, he has no idea how to react when I start to cry. Boys!

Yes! Our cafeteria is pretty awesome. They just started a new menu with fresh, made on site healthy dishes. 🙂

ali knows that i mean business when i cry because it happens very, very rarely! i’m about to cry about my lack of a shift key though…things are getting dangerous around here…
