Hi y’all!  I think this is now week six of WIAW for me. Smile However, starting this week, I am changing things up a bit.  I really feel like my Wednesday eats are boring and not so fun to blog about, so from now on, I’m going to feature all the fun (for me at least) things I eat during the week but don’t write about.  Deal!?

My very own version of Caitlin’s amazing sandwich!  After a few modifications, here’s what I came up with…

  • 2 slices of toasted wheat bread
  • Garlic hummus
  • Annie’s Goddess dressing
  • 2% sharp cheddar cheese
  • Pureed red kidney beans

…truly delicious and very different!

I woke up super hungry on Saturday morning, but nothing sounded appetizing.  I stood in my kitchen for a few minutes hoping to be hit with inspiration.  And then it really did hit me…another way to incorporate peanut butter, bananas, and chocolate – genius!

All I did was mash up a ripe banana and add a little cocoa powder (1/2 tablespoon).  I then spread some PB on toasted wheat bread and topped it all off with the banana chocolate mixture.  It was so good!  Go me!

Since I didn’t feel like making an entire pot of homemade mac n’ cheese all for myself because I have no self control, I decided to do the next best thing and doctor up a box of Annie’s organic mac n’ cheese.  I added a dollop of ricotta and 1/4 cup of sharp cheddar to the mix.  So.freakin’.delicious!  It really hit the spot – super cheesy and creamy.  Another win for me!

I took inspiration from yet another blogger and created this delicious dinner.   Lindsay featured her sweet potato nachos a few weeks ago, and I honestly couldn’t get them out of my mind since.  This recipe does not disappoint. 

All I did to prepare my sweet potatoes was cut them into round slices, coat them in a little olive oil, and bake them for about 12 minutes (flipping once in the middle) in a 400 degree oven.  When they were done, I topped them with my leftover pureed red kidney beans, cheese, salsa, onions, tomatoes, and avocado.  Holy yum! 

Well, there you have it…another week, another WIAW…with a twist!  I think this What I Ate Wednesday [and all week long] version suits me better!

    Favorite blogger recipe lately is the baked/grilled stuffed zucchini I posted for WIAW. That was a killer find that will be often repeated!

  2. I love sweet potatoes and the nachos look fabulous! I’m definitely going to try mixing the banana with cocoa powder…I have a feeling Maya would LOVE it. And I could probably spin it as a dessert. 🙂

  3. Isn’t it the worst when you stand there not knowing what kind of craving you’re having? I do that every once in a while and get so frustrated!

    It mostly leads to me nibbling my way through the pantry until I figure it out… lol

For example, her grilled banana sandwich, sweet potato pancake, and so many other bloggers’ recipes. btw I love your sari!! acckkk I remember last year in India, my friends and I were almost going to buy some–but didn’t want to spend time doing it as it would have been burdensome for the pastors we were with hehe 😛
