Breakfast
Yep, another smoothie. This never gets old!
This was exactly what I needed after my 4 mile run!
In the mix was…
-
1 frozen banana (I’m quickly realizing that frozen is the only way to go)
-
1 scoop Sun Warrior chocolate protein powder
-
1 tablespoon Hershey’s Dark Chocolate cocoa powder
-
1 spoon of PB
-
1 cup skim milk
-
1 large handful spinach
…blend (well) and enjoy!
Lunch
So, I decided to change things up this week and bring my lunch from home today. I saved my free lunch coupon for tomorrow!
This is a simple yet delicious cheddar and tomato sandwich on whole wheat bread. The special ingredient is the Annie’s Goddess dressing I used as a spread. YUM!
I also enjoyed some thick Greek yogurt with fresh strawberries as a snack. The fresh fruit and yogurt combo really is unbeatable!
This crisp apple was my late afternoon snack. DELISH!
Dinner
I had a craving for some home cooked Indian food today, so dinner is going to be (it’s still simmering away on the stove) a spiced edamame, spinach, and tomato stew along side some quinoa. I taste tested to see if I needed to adjust the spice level, and if I do say so myself, it’s quite delicious. GO ME! (Recipe to be posted soon.)

Well, there you have it…another week, another WIAW! I’m sure I’ll be finishing off the night with some dark chocolate chips…you know how I do!

Hmm the best thing I ate this week was a roasted veggie and goat cheese pasta I made a few nights ago. I gobbled it right up though and forgot to take pictures. 😛
I agree quinoa is by far the best alternative to rice, as a matter of fact i am going to say its better than rice.
I ate an amazing brown rice fried rice today and the vegan pasta carbonara yesterday.
Blog world is OBSESSED with annies green goddess dressing isnt it? I see it in mass quantities throughout the week and esp on WIAW…. ok ok i’ll buy it! and then make your sandwich =)

Hmm, I don’t know. I gotta say I’ve had a few good eats: Key Lime Pie ice cream, TJ’s savory tofu (way better than I imagined), mexi stuffed peppers. And tonight I had some beignets!

Earlier this week I had some awesome chana masala, sag paneer, and garlic naan. I wish that I could say I made it from scratch but it was tasty, healthy, and inexpensive! 🙂

Oh yum eats, especially lunch- simple yet always a winner! How convenient that you can save your lunch coupon- kinda like a ‘free from packing a lunch’ pass haha! Best thing I’ve eaten this week is potatoes roasted in truffle oil- so easy, yet so delicious!!

This week I haven’t had a lot of inspired eats – it’s been pretty crazy busy! However, I’m looking forward to *hopefully* some great eats this weekend!
My week’s eats have been so BLAH! I’ve been busy and I haven’t put a lot of effort into making scrumptious meals. So my cereal combos or my oatmeal have been the best things of the week!
