Can you believe it’s already Wednesday…or June 1st for that matter!? Craziness!
The weather here in the NE has been nuts! I left work early because of all the tornado warnings. I have the news on in the background while I write this post, and just from initial reports, it looks like the damage from the tornados that touched down is pretty extensive. Please keep those affected by this storm in your thoughts and prayers. Lots to pray for lately…
The calm after the storm (where I live at least)
With this being Wednesday, I am happy to bring you my second installment of WIAW (the brainchild of Jenn at Peas & Crayons). So lets get started!
PB + Banana + Chocolate Protein Shake
In the blender went:
1 tablespoon cocoa powder
1 scoop Sun Warrior chocolate protein powder
1 frozen banana
1 spoonful PB
1 cup soy milk
1 large handful spinach leaves
Blend all ingredients together to create a cold, creamy treat. This bad boy kept me full for almost 5 hours!!!
Lunch
For those of you who read my first WIAW post, you know that I’m unable to take pictures at work. And because my lunch is usually free on Wednesdays (staff meetings), I almost always opt to get something from our cafeteria. The word cafeteria may generate images of unhealthy (and nasty) food in your minds, but just hear me out…my work cafeteria is super special! Lunch today consisted of…

Chickpea quinoa stew with mixed veggies and mild spices – freakin’ delicious!

Jicama and kale slaw with orange pieces all in a citrus marinade

These are just a few examples of the vegetarian options from the Whole Sum specialty menu at work. As I mentioned before, we have our own chef who prepares fresh, nutritious meals every day. Each entrée is under 300 calories, and the sides are each under 150 calories. Cool, huh?! I think I shrieked when I walked through the cafeteria for the first time. LOL!
Snacks
My usual snackage – an apple and Larabar
Dinner
Leftover Eggplant Parmesan
It tasted even better today! I can’t say it enough…sooo good! I can’t wait to make this for someone other then myself.
Dessert
The usual – Ghirardelli dark chocolate chips
No night is complete without a small sweet treat!
