Breakfast Eats

Happy Wednesday!  The weekend is almost here…I can feel it!!

As those of you who read my blog already know, I do not post about everything (or even close to it) I eat on a daily basis.  This will never be one those kinds of blogs.  My daily eats aren’t that interesting!  There are definitely some bloggers who pull it off so well with their pretty food – me, not so much!  I don’t even blog about food everyday.  Ha!

However, I did want to share my breakfast eats with y’all because breakfast is my favorite meal of the day!  I used to be a milk and cereal kind of girl only.  That has definitely changed.  Now, I mix it up with oatmeal, smoothies, and breakfast cookies. 

Over the past three mornings, instead of running around like a chicken with its head cut off and rushing to get ready, I woke up a little earlier, made breakfast, and took pictures.  All for you guys!  I wanted to share my three favorite breakfast eats since that’s one meal you hardly ever see or hear about on my blog.  Shall we get started?!

Monday’s Breakfast: Peanut Butter & Cocoa Banana Smoothie

This here is probably my favorite breakfast treat.  I hurry through my morning routine just so I can make and drink this big guy up!  Here’s how you make this delicious smoothie…so easy!

1 frozen banana
1 cup skim milk
1 tablespoon peanut butter
1 tablespoon unsweetened cocoa powder
1 tablespoon ground flax meal
handful of ice (if you like your smoothies a bit thicker)

Blend all ingredients until smooth and thick…YUMMY!

Tuesday’s Breakfast:  Chocolate Oatmeal with a Crunch

A warm bowl of oatmeal seriously warms the soul!  This chocolately bowl of oats is perfect – smooth, creamy, and sweet…with a slight crunch.  In the mix:

1/4 water
1 cup almond milk
1/4 steel-cut oats
a few dashes of cinnamon
1 tablespoon DCD peanut butter
1 tablespoon chia seeds
1/2 tablespoon unsweetened coconut flakes

Heat a small saucepan over medium heat. Add water, milk, and oats. Once the mixture starts to bubble, whisk in the cinnamon. Continue whisking every few minutes until thick (about 8-10 minutes). Pour into a bowl and top with DCD, chia seeds, and coconut flakes. Enjoy – your soul will thank you! 😉

Wednesday’s Breakfast:  Green Fruit Smoothie

All I can say about this one is that you can’t taste the spinach at all!  And just think about all the extra nutrients you’re getting first thing in the morning!  If you haven’t had a “green” drink yet, try it out.  And share your yummy recipes with me please. 🙂

1 frozen banana
5-8 frozen strawberries
small handful of frozen blueberries
small handful of frozen mangoes
2 handfuls of spinach
~6 oz coconut water
1 tablespoon ground flax meal

Blend all of the ingredients together until smooth. Drink up!

Well, I hope you enjoyed seeing my three favorite breakfast eats in one post.  I’m already craving breakfast, and I just ate dinner!  LOL!  Off to get ready for some Modern Family (it’s an oldie but a goldie)! 😉

  1. My standard breakfast is PB and J on toast, or bagels with laughing cow, or a smoothie that i assemble in the blender the night before!

    Don’t you just love spinach in smoothies?!

  2. Parita, I love that your mixing up your breakfast routine! I am trying to do the same myself bec although I tend to make something hot, its tend to be one of only two dishes! Your dishes look wonderful, it’s inspiring me to try more smoothies 🙂

    I would say that all love all three meals for different reasons – heck I just love food 🙂

  3. Oh man your peanut butter nanner smoothie looks delicious! So creamy, yummm. And I need to start adding coconut to my oats, I never do that and your dish looks amazing. Breakfast is my favorite meal of the day by far. I love overnight oats, hot oats, and breakfast cookie Fitnessista style 😛

  5. Ohhhh… the chocolate! I just had a chocolate protein shake and added cinnamon + chili powder. Mexi-Carob-Shake! Try it – I promise it’s tasty. 🙂

  6. Breakfast is definetely my favorite meal of the day! I also try and have something different every day to keep things excited…they all tend to include oats and pb though! Try adding chia gel to your smoothies- they are a great thickening agent!

    Tuesday was apple pie oatmeal, Wednesday was overnight oats, and today was oatmeal pancake (half with gooey pb+banana and the other half with strawberries with my ‘cheesecake’ dip)!

  7. I hadn’t thought to add chocolate to my oatmeal! It’s like a perfect marriage of my old favorite thing (peanut butter, specifically Justin’s chocolate peanut butter) and my new love, oatmeal!

    My favorite meal is every meal. I know that sounds totally cheesy, but I try to enjoy every single meal I eat – I think I definitely look forward to my bedtime snack the most though – maybe because it signifies the end of the day!

  8. Breakfast for me is always fruit. Usually apples and bananas but now that spring is here I hope to add more berries. I usually like something simple that I can eat on my long commute or nibble on while I check my email at work.

    I think my favorite meal is dinner because I usually have more time to make it. I can savor every bite!
