Work was great today!  I think I’m really going to like my new role.  The people are great, and I have my own office…well, kinda!  It’s more of a cube with tall walls and a door but whatever. 🙂

So, on my way home from work today I started thinking about dinner (naturally), and I decided that I wanted a quesadilla with some fresh veggies, goat cheese, and salsa.  Great plan, right?!  Wrong.  I got home and found out that my hotel didn’t provide me with a knife to cut my veggies, BUT I do have a cutting board (yeah, I don’t get it either).  What’s a girl to do?  Well, I still had my quesadilla, minus the veggies.  I normally don’t really like just tortillas and cheese, but the goat cheese really added another dimension to the flavor – it was tangy and gooey!  So, not a complete fail, but I will make it a point to stop at the Target near work to pick up a knife…it’s already on my list!  Can’t let me veggies go to waste. 🙂

So, I have a blog dilemma that I’m hoping y’all can help me with.  On Saturday night I started noticing that my comments weren’t showing up on certain blogs that I regularly frequent.  The little computer genius in me (haha, who are we kidding) thought that it may be because my computer was still set to AZ time, so I changed that.  I also changed the time zone setting on my own blog thinking that the issue may be stemming from there.  But I was wrong, and I still can’t figure it out!  HELP ME!!!  This is really bugging me!  If you can think of anything else for me to try, please let me know.  I really appreciate it!!! 🙂

Well, I am pooped!  I still have tons to do before I pass out…oh the joys of Corporate America!  Thanks!

  4. Girl that is not a quesadilla fail, it looks delicious! And I was having some issues on wordpress with some of the comments showing up as spam, still does it at times 🙁

    1. You’re right, it was pretty good! And I solved the problem and am going to post the solution tonight because I have a feeling a lot of people are having issues with this….so annoying!

  5. I discovered your blog yesterday via another blog and I must admit I like it! You’re such a cute and lovely girl who doesn’t lack the sense of humour. I’m just wondering..how come you live in a hotel? Is it just temporary, a few days or.. just curious 😉 What kind of job do you have now?
    I love Indian food, I make my own chapatis, rotis, naan, ghee, vegetable sauces.. and like them lots!

  6. I hate it when you are planning on a certain meal and then get foiled by missing supplies (or for me, it’s usually ingredients)! Last week, when I was in Georgia, I bought a microwave meal for dinner, only to realize when I arrived home that my room had a fridge but no microwave! Luckily the hotel office had one, and generously let me use it, or I would have been without dinner!

    Goat cheese is my favorite. I used herbed goat cheese in the egg muffins I made this morning! Have you had the rosemary goat cheese from Costco? YUM!

    Tip on single-buying: bread freezes. PreviouslyI rarely made muffins/biscuits/etc because I couldn’t eat them fast enough, and am loving having them in the freezer for a quick meal addition.

    And I definitely meal-plan… using Excel, like a good MBA. 😉

    1. I haven’t tried the rosemary kind…it’s on my list now though! You need to try the blueberry goat cheese at Costco…awesome! Maybe you should post on how you use Excel to meal plan…think of it as an MBA lesson! 😉
