Holy Guacamole!

My day started with an early morning 4 mile run outside! 🙂  There is a great road right by my aunt and uncle’s house that is perfect for runners and bikers.  Next time I will bring my camera so I can capture some of the breathtaking views!

My day also involved a visit to the car wash since my car is going to be picked up tomorrow for its big cross-country move, and I want it to be squeaky clean.  I headed to the car wash with just an external wash in mind, but this time around I got a package that included an exterior wash, tire scrub, and internal vacuum – all for less than $15!!  Look at my baby shine!

Dinner today was a hodge podge of different things for everyone.  My little cousin had a quesadilla, my uncle had a cauliflower and peas shak, my aunt’s in-laws had teriyaki chicken and rice, and my aunt and I had channa (Indian chickpeas) in a yogurt sauce.  However, the one thing that everyone had and enjoyed was my world-famous (slight exaggeration) guacamole!  It’s so super easy to make, and it’s so fresh and delicious.  Next time you have a get together or are planning on Mexican food (or not in our case) for the night, try making this.

Holy Guacamole Recipe 

2 large avocados (that give slightly when pressed)
3 roma tomatoes
1/2 of a large sweet onion
2 garlic cloves
handful of cilantro (amount can vary based on taste)
1 small lime
salt to taste
ground red pepper

1. Scoop out the avocados and chop into chunks, add to bowl
2. Chop the tomatoes and onions into small pieces, add to bowl
3. Mince the garlic, add to bowl
4. Finely chop the cilantro, add to bowl
5. Juice the lime over veggies in the bowl
6. Add the salt and a few good dashes of pepper
[Now comes the hard work!]
7. Take a fork and start smashing the avocado and combining all the ingredients, keep working it until the mixture reaches your desired consistency
8. Taste and adjust seasonings
9. Enjoy with your favorite chips!

After dinner I was really craving something sweet, so I may or may not have had a handful of mini chocolate chips!!!

Mmm mmm good!

    There is nothing like a clean car! But I hate going to the car wash…that’s where my husband finally comes in handy. 🙂

    I ward off my sweet tooth by eating something salty like chips. I’m not sure if the chips are really the healthiest alternative? But it works for me.

      Luckily this wasn’t a do it yourself type of carwash…hate those! And I’ll have to try the salty food trick…interesting!

    My car is absolutely FILTHY so I was planning on going through the carwash sometime this week too. No doubt a bird will poop on it or it will rain the next day though…never fails…

      Np! I am moving to the Boston area – so excited! I can’t wait to be all settled. The man who picked up my car told me that it would be just as clean when it is delivered…we’ll see!

    Hmm, favorite way to combat a sweet tooth is a banana with peanut butter or a little fruit smoothie!

    I LOVE those blue chips from Trader Joe’s! They’re always around my house because I get serious cravings for mexican food (and that guac looks heavenly by the way) pretty much every week without fail.

    My sad car needs to be cleaned soooo badly! If only the snow would stop!!!!

      Mexican food is my favorite (after Indian)!! Those chips help make for some yummy nachos too!

    Ooh I LOVE Mexican food! I just made a Mexican-ish sort of dish for dinner tonight. I LOVE banana soft serve and raw cookie dough doesn’t hurt either when it comes to my sweet tooth 🙂
