Eatin’ Out

My weekend was filled with great food, awesome friends, and my wonderful family!  On Friday, my friends and I went to a local restaurant called Lovin’ Spoonfuls for dinner.  This is, hands down, my favorite restaurant in Tucson!  It’s absolutely delicious and 100% vegan.   Tuscon visitors should not leave the city until they have been to Lovin’ Spoonfuls (even meat eaters).  In fact, it’s so good that I went again today with my family for lunch. I have never walked out of this restaurant feeling unsatisfied!

On Friday, I got the Santa Fe plate, which consisted of baked polenta, tomato and basil relish/sauce, and black beans.  I washed all of that down with a soy milkshake called the Mexican Delight (a combination of chocolate and coffee).  YUMMY!  I am definitely going to try to recreate that dish and shake at home.

Today, I got my usual, the club sandwich with China Black Tea.  This is probably one of the best sandwiches I have ever had.  It’s made with soy ham and turkey, vegan mayo, tomatoes, lettuce, and oat grain bread.  DELISH!

It’s a good thing that Lovin Spoonfuls is a healthy place because dinner last night was definitely no where near healthy.  My family and I went to Mi Nidito.  Mi Nidito is a well-known Mexican restaurant in Tucson that’s been around since the 50’s.  It serves real Sonoran food, which equals delicious, cheesy goodness!  I ended up ordering a bean enchilada with a side of rice.  We also ordered the guacamole to share.  Everything tasted so fresh compared to other Mexican restaurants.  Mi Nidito’s tortillas, guac, beans, and rice are the BEST!  Another Tucson gem worth trying!

Since balance is my new favorite word, I plan on balancing out all of the eating I did this weekend by doing some yoga this evening.  I’ve been wanting to get Jillian Michael’s Yoga Meltdown DVD for awhile now and finally made my way to Target to buy it.  I LOVE her workouts and plan on blogging about all 4 of the DVDs I own soon!

Girl Connection

From time to time, we all need to step out of the bubble that we call life and experience something new from someone else’s perspective.  One way to do this is to volunteer.  I was lucky enough to have that opportunity today with an event that I helped organize called Girl Connection.

The premise behind Girl Connection was to have an event for girls by girls.  The girls, ages 10-15, were from local Boys and Girls Clubs.  We hosted 3 workshops (relationships, money, and beauty), a self-defense session, and a fun Zumba class at the end.  By the end of the event, I felt both inspired and sad.  I felt inspired to volunteer more and mentor youth in the community, and I felt sad because these girls have probably gone through more in their short 12 years then I will in a lifetime.  Some of these girls have seen some horrific things, including abuse and violence.  Please don’t get me wrong…in no way do I feel sorry for these girls.  In fact, after today, I am certain that they will be our next doctors, nurses, teaches, engineers, etc.  How do I know this?  At the end of the event, the question was posed, “how many of you want to go to college?”  ALL OF THEM raised their hands!  I hope that they continue to be ambitious and curious, and more than anything, I hope that they continue to persevere and overcome everything life throws at them.

Overall, I feel really lucky and appreciative to have the life that I do.  My childhood was filled with laughter and love.    I had no worries in the world except getting my homework done and figuring out whose house my friends and I were going to have a sleepover at on the weekends.  There was hardly any stress or fear in my life.  And although I can’t say my adult life is stress-free, I can say that most of my stress is self-induced.  I have a wonderful family, a loving boyfriend, great friends, a great career, etc.  Honestly, it can’t get any better than this.  I am truly VERY lucky.

And even though I believe that we should all reflect on the things we have and be more appreciative, I don’t think that’s enough.  We need to take action, give back to the community, and really help those who weren’t blessed with the best lives.

Morning Oatmeal

For as long as I can remember, I have been a milk and cereal girl.  Ask anyone who knows me, and they will tell you that I don’t just like cereal, I am obsessed with it!  My favorite cereals are Honey Bunches of Oats, Banana Nut Crunch, Multigrain Cheerios, and the list goes on.

Recently, I started making oatmeal a few mornings a week, and OMG do I love it!  My mom was the one who introduced me to it, and I must admit, I was extremely skeptical at first.  In fact, the very first time I tried to make oatmeal all on my own…I failed.  It was a gooey mess!  I then tried again, adding some simple “extras.”  Not only is oatmeal delicious, it tastes great with a cup of coffee, and it keeps you full until lunch!  Personally, I believe I have mastered the oatmeal making process (to my taste that is).  And today, I am going to share my morning oatmeal recipe. 🙂

This recipe serves 1.

1/4 cup water

1/2 cup skim milk

1/4 cup quick cooking oats

2 Tbs. ground flax seeds

1 tsp. cinnamon

1 banana – shredded or cut into tiny pieces

1 spoon of natural peanut butter

1/4 cup granola

Heat the water and milk in a saucepan for a few minutes over medium heat.  Then add the oats, ground flax seeds, and cinnamon.  Mix well.  When the mixture starts to thicken a little, add the banana.  Keep stirring until all the ingredients are combined and the mixture starts to bubble.  Pour it into a bowl and add the peanut butter and granola.  Enjoy!!!

Dark chocolate chips, maple syrup, chia seeds, nuts, dried fruit, etc.

Morning oatmeal is a fun way to unleash your inner creativity in the kitchen AND start your day right!

Hello world!

My first blog post EVER!  This is a really exciting moment for me because I have been wanting to do this for a really long time.  A conversation with one of my best friends really got the ball rolling for me today.  I told her how I want to start a blog “one day,” and her enthusiastic response of “you totally should” really made something click in my head.  Immediately after I got off the phone with her, I got on the internet and did some research…the rest is history!  I really want to write more, but I am exhausted (I know, I know… it’s only 9:30)!  Another reason I want to get to bed early is because I want to get up bright and early to do my super fun strength training DVD (Jillian Michael’s No More Trouble Zones).  I haven’t done a hard core strength workout in over a week, so wish me luck!
