Happily Ever After

Hello hello!  Phew…this past weekend was a fun whirlwind.  I had been looking forward to my friend Purvi’s wedding for a very long time, and it came and went just like that.  I wish I could say that I took pictures of everything, but I can’t.  You see, I was one of Purvi’s bridesmaids, so I didn’t even think about taking pictures a lot of the time.  I was just trying to enjoy every moment.  Hence, I gave my camera to Vishnu, but based on the number of pictures he took, I think my fiancé was trying to do the same thing. Smile

Let me share what I can…

On Friday evening, I headed to Purvi’s mehndhi party.  I got there a little early so I could spend some time with the bride and the other bridesmaids.

On Friday morning, I attended the traditional religious events that happen before most wedding ceremonies.  The yellow stuff you’ll see in the pictures below is a mixture made of turmeric, sandalwood, and a  few other things.  Both the bride and the groom have the paste applied to their body to purify it before the wedding ceremony.

The garba (dance event) was on Friday night.  The décor was absolutely gorgeous, but the bride and groom stole the show!

And then on Saturday morning, we all got up early to get ready for the big day!  In one word, everything was…perfect. The camera was in the car at this time, so I’ll share some of Vishnu’s iPhone pics when I get them.  Sorry!

And finally, the weekend ended on a high note with a grand reception.  There were funny speeches, dances, a love story video, and an embarrassing pictures slideshow.  Too much fun!

In other news, I found a job in South Florida!!!  Well, it’s more like the job found me, but that story is for another day.  If you remember, job stress was weighing me down quite a bit.  However, on Saturday morning, I got my official job offer!  Excited doesn’t even begin to describe what I’m feeling.  Yay!

Also, since being home, I’ve been cooking up a storm.  Yesterday, I made my parents a warm salad with roasted vegetables and a slightly unique version of Mmmm Sauce.  And tonight I made veggie and black bean quesadillas for dinner – filled with black beans, corn, zucchini, onion, and green bell pepper. 

I also have quite a few wedding updates to share, but I’ll save al that for another post.

“Cheese” Sauce for One

As I mentioned in my last post, Vishnu and I are heading to Atlanta today.  Woo hoo!  I can’t wait to spend some time with my family before the big day.  Smile There’s still so much left to do before the wedding, but I’m confident that my mom and I will get it all done with time to spare.  And now that Vishnu’s a little more free, in terms of time, he’ll be able to help as well.

Because we’ll be gone for a few weeks, I didn’t stock up on groceries.  Instead, I managed with the things currently in my fridge and pantry.  Lots of egg whites and vegetables were consumed over the past few days.  Not too surprising though!

Anyway, not wanting to eat yet another omelet, I was forced to come up with something new for lunch yesterday.  I knew I wanted to use up some whole wheat penne and spinach I had sitting around.  With no marinara to top my bowl of pasta with, I decided to make my own cheese sauce….with nutritional yeast…dun dun dun!

My family and a lot of my friends have tried my “normal” mac n’ cheese made with real cheddar.  In fact, I’ve made it so many times now that I don’t even have to look at a recipe.  So, when I was trying to figure out how to make my nutritional yeast cheese sauce, I thought about that tried and true recipe to come up with my new healthy version.

I wasn’t sure how the sauce was going to turn out, but I’m happy to report that it was delicious.  In all honesty, it didn’t taste exactly like the real thing, but it was rich, creamy, flavorful, and cheesy”esque” – exactly what I was hoping for.

“Cheese” Sauce for One
Serves 1

2 tablespoons nutritional yeast
1 tablespoon all purpose flour
1/2 teaspoon garlic powder
1/2 teaspoon chili powder
1/4 teaspoon paprika
1/8 teaspoon cayenne pepper

salt and pepper to taste
1/2 tablespoon olive oil
1/4 cup water
2 tablespoon milk of choice (I used unsweetened almond milk)
1/2 teaspoon lemon juice

Mix all of the ingredients together in a bowl until combined.  Microwave for 30 seconds, stir, and repeat for another 30 seconds.

Sautéed spinach was the perfect addition to this dish.  All of the flavors really worked well together! 

I’m not going to lie, I kind of felt like I was on the Food Network show Chopped.  If I do say so myself, I think this dish would’ve survived the chopping block.  Smile

Wow…the next time I post, it’ll be from Atlanta.  YAY!

A Successful Move

Hello from Fort Lauderdale!  I’m happy to report that my move down here went better than expected and was not really stressful at all.  In fact, my dad and I had a great time.  I can’t put into words how thankful I am that he was able to fly down and help me this weekend.  He’s pretty awesome!  Smile

Since I’m kind of neurotic and like to do things well in advance, there wasn’t much left to do except wait for the movers on Saturday, so my dad and I spent a lot of Friday just hanging out.  We had a late lunch at Chipotle, which was great not only because I love Chipotle but also because this was my dad’s first time eating there.  Can you believe it?  He’s now a huge fan!  A bit later we decided to make an impromptu trip to St. Pete beach.  My dad was amazed that I had never been before, especially because I only lived about 15 minutes minutes away.  I kind of felt like a dummy!

On Saturday morning, we picked up the U-Haul, and a short while later, the movers arrived to load my stuff.  In less than an hour, we were on our way to Fort Lauderdale.  The drive took a bit longer than usual because my dad gave me very specific instructions to go slow so that he could follow me.  I lost him a little after the half way point.  I kind of knew that plan was bound to fail.  Whoops!

Since the apartment officially became ours earlier in the week, moving in was pretty easy.  We unloaded my car and then waited for the movers to come unload the U-Haul.  Again, the whole unloading process took less than an hour.  At this point, I breathed a huge sigh of relief.  The move was officially over!  I’m pretty sure I slept better that night than I have in a LONG time.  It felt so good!

On Sunday, my dad and I spent most of the day unpacking boxes.  Our goal was to set up the kitchen, and I’m happy to report that we were successful.

The rest of the apartment is pretty bare, except for a couch in the living room and a bed in the guest room.  I’ll definitely share more as we move along in the decorating process.

Well, that’s all I’ve been up to over the past few days.  Vishnu has one more exam, and then we’re off to Atlanta later this week!!  Yay!  As soon as we get back, we’ll be heading to Purvi’s first wedding event!  I can’t wait for all the fun to come over the next month.

Kickbox Fast Fix

It’s no secret that I love Jillian Michaels and her workout DVDs. In fact, I own six of them. The newest addition to my collection is Kickbox Fast Fix. And like most of Jillian’s other DVDs, this one doesn’t disappoint!



This workout is a bit unique from the others in several ways. One of the major differences is that this DVD is broken up into three separate 20 minute workouts, with workout one focusing primarily on the upper body, workout two on the lower body, and workout three on abs. Also, instead of having two girls in the background working out with her, she has about seven. And from what I observed, not all the girls are at the same level – some were going all out with every single move, while others didn’t kick as high or punch as hard. That was definitely a nice change. Another change is that there is no warm up at the beginning of the workouts. Jillian gets right into the first circuit with some light cardio and then moves on. And while most all of her DVDs (at least the ones that I own) are very structured in terms of only strength or only cardio or a particular combination of the two, this DVD is a bit more random and there’s a bit of both scattered throughout each workout.

One other important thing to note is that this DVD comes with a tutorial, and I highly recommend that you watch it BEFORE attempting the workouts. I almost didn’t take the time to do so but am glad I did. Jillian isn’t as instructional in this DVD as she is in others, so don’t expect much, if any, explanation from her about the moves. Even though I know what uppercuts and jabs are, I wouldn’t have been able to follow along with the quick sequence of moves without knowing the exact terminology Jillian uses. The tutorial is kind of a must, and you should watch it at least once. Trust me.

The one thing about this DVD that is similar to the others is that each workout is still broken up into mini circuits. The only difference is that each move in the circuit is done for 30 seconds at a time, and she encourages you to do to as many reps of the move as you can. Each of the workouts uses elements of kickboxing, traditional cardio, and strength moves. For example, in workout one, one of the circuits is a combination of punches, pushups, jump rope, and suicide runs. Workout two and three are similarly structured but with more emphasis on the lower body and abs, respectively. There is no shortage of kicks, punches, and ab work in any of the workouts.

Overall, I really enjoyed this DVD – intense sweating and huffing/puffing included! The constant variation and quick change ups kept me going and really made each of the 20 minutes fly. I was definitely not in sync with Jillian and the gang 100% of the time, but with every use of this DVD, I think that’ll improve. And once I’m more familiar with the combos, I might use light weights to increase the “burn” factor. We’ll see about that though…  Even without added weight, my thighs, calves, triceps, and abs are sore today. And that’s always a good thing!

Life Lately…

Life lately has been full of a lot of excitement.  One of my best friends just got engaged on Sunday, and I’m so over-the-top happy for her!  I honestly felt like I was reliving my own engagement when I found out about hers.  I love love!

Life lately has been full of packing.  Lots and lots of packing.  My dad is flying in on Thursday night, and we’re driving down to Fort Lauderdale on Saturday – me in my car and my dad in a U-Haul.  Thank God for my dad!

Life lately has been full of omelets.  My sister called today just as I was finishing dinner, and when I told her what I ate, she laughed.  I’ve been eating an egg white omelet with black beans, goat cheese, and salsa for dinner every other night for the past week and a half.  What can I say – it’s easy and filling.  And anyway, it’s hard to cook when most of your pots, pans, and kitchen gadgets are packed away.

Life lately has been full of funny ideas.  The particular incident I’m thinking about has to do with our new apartment and Vishnu’s inspection.  After getting the keys, he went in to take a look and then called me to let me know everything was good to go.  Almost.  He told me that we would most likely have to put our dresser in the closet because there was no way everything was going to fit in our bedroom.  My initial response was, “You want to put the dresser in the closet?!  What are you talking about!?”  He told me there’s no space for all of our furniture.  I then proceeded to go online and take a closer look at the layout and dimensions for our apartment.  I didn’t know what he was talking about – the master bedroom is huge.  I laughed at his ridiculous comment, but he was still convinced that the dresser was going in the closet.  When he got back to his apartment, he decided to measure all of the furniture to see if it would indeed fit [like I believed].  I got a phone call afterwards, and lo and behold, the dresser will not be going in the closet. 

Life lately has been full of nerds.  I’m done with the first five seasons of The Big Bang Theory.  LOVE THIS SHOW!  I can’t wait for season six to start in September!

Life lately has been full of sleepless nights.  And this is frustrating.  There is nothing better then getting into bed, closing your eyes, letting your body relax, and falling fast asleep.  But no.  I get into bed, toss and turn, and get up at least twice throughout the night.  I would be surprised if I was getting a full six hours a night.  This has got to change…ASAP.  I’m really hoping being back at home for a while will help remedy the situation.  *Fingers crossed*
